Preparation method
- Heat the oil in a heavy-based pot and sauté the chopped onions and garlic until translucent
- Toss in the beef cubes and brown them well over medium-high heat
- Add the bay leaf and black pepper to the pot
- Continue sautéing until the meat has developed a deep, golden-brown crust
- Pour in the hot water and crumble the beef stock cubes into the liquid
- Stir continuously until the stock cubes have fully dissolved into the broth
- Stir in the tomato purée to thicken the base
- Pour in the dry red wine to deglaze the pot and add complexity
- Add the diced green bell pepper
- Combine all ingredients thoroughly, cover, and let it simmer for 30 minutes
- Gently fold in the whole pearl onions
- Simmer for another 10 minutes until the onions are tender and the sauce is perfectly rich before serving
