Preparation method
- Finely dice the onion.
- Bring the water to a rolling boil.
- Heat a medium-sized pot over low heat.
- Add the olive oil and diced onion to the pot.
- Add a pinch of salt.
- Sauté the onion for 2 minutes until translucent and soft.
- Stir in the bay leaf.
- Add the rice and stir for 1 minute, ensuring every grain is coated in oil.
- Pour the boiling water over the rice.
- Season with the remaining salt and give it a gentle stir.
- Increase the heat to medium.
- Do not stir the rice again from this point on.
- Wait until the water level reaches the surface of the rice.
- Lower the heat and cover the pot partially with the lid.
- Cook until all the water has been fully absorbed.
- Check for doneness by using a fork to gently move the grains at the bottom of the pot.
- Keep on heat for a few more seconds if there is still residual moisture.
- Turn off the heat and let the pot remain covered for 5 minutes to let the steam finish the cooking process.
- Fluff the rice gently with a fork before serving.
