Pressure cooker caramelised condensed milk (Doce de leite na panela de pressão)

Ingredients

1 tin sweetened condensed milk (395 g)

Where to find ingredients

Tinned sweetened condensed milk is usually available in supermarkets, kai bars with grocery shelves and trade stores, often near canned milk, baking goods or dessert ingredients. Use sweetened condensed milk for the proper result; caramel topping is only a substitute.

Preparation method

  1. Remove the paper label from the tin of sweetened condensed milk
  2. With a small knife, scrape off any glue residue so it does not block the pressure cooker valve
  3. Place the tin of sweetened condensed milk inside the pressure cooker
  4. Add water to the cooker until the tin is covered, leaving about two fingers of water above it
  5. Close the pressure cooker and place it on medium heat
  6. Once the cooker starts whistling, reduce the heat if necessary and cook for 20 minutes
  7. Turn off the heat and allow the steam to release naturally. Do not force the steam out
  8. When all the pressure has released, open the lid carefully
  9. Use tongs to remove the hot tin from the cooker, avoiding burns
  10. Leave the tin to cool completely for at least 2 hours before opening
  11. For best results, prepare the doce de leite the day before eating
