2 medium papayas, with fresh pulp
250ml fresh heavy cream for whipping
2 tablespoons chopped cashew nuts
2 medium papayas, with fresh pulp
250ml fresh heavy cream for whipping
Where to find ingredients
Sugar and heavy cream can be found in the baking aisle of most supermarkets. Cashew nuts are usually available in the nuts and dried fruits section, or sometimes with baking ingredients. Papayas are tropical fruits, often found in the produce section. Look for ripe papayas that yield slightly to gentle pressure. If you can't find cashew nuts, almonds or peanuts can be used as a substitute.
Preparation method
- Cut the papayas in half and remove all seeds
- Scoop out the pulp of one papaya and process until you get a smooth puree
- Dice the pulp of the second papaya into small pieces and set aside
- Whip the heavy cream with the sugar in a mixer until it forms stiff peaks
- Gently fold the papaya puree into the whipped cream, maintaining a light consistency
- Add the diced papaya pieces and gently incorporate
- Pour the mixture into ice cube trays or a suitable container and freeze for at least 4 hours
- To unmold, briefly dip the bottom of the container in warm water
- Cut the ice cream into cubes, serve in bowls, and top with the chopped cashew nuts
- If desired, add a few drops of lemon juice over the bowls for a citrusy touch
