2 green plantains
2 cups coarse yellow cornmeal
75 g butter, cubed
1 tablespoon vegetable oil
Salt to taste
Freshly ground black pepper to taste
2 cups coarse yellow cornmeal
75 g butter, cubed
1 tablespoon vegetable oil
Salt to taste
Freshly ground black pepper to taste
Where to find ingredients
Green plantains can be found at most local greengrocers or in the produce sections of larger supermarkets. For the coarse yellow cornmeal, look in the baking or world foods aisle; it's different from fine cornmeal. Butter, oil, and seasonings are standard pantry items available at any grocery store.
Preparation method
- Trim the ends off the plantains and peel them
- Slice each plantain in half lengthways
- Cut each half lengthways again to create long strips
- If the strips are chunky, cut them into three parts
- Dice the plantain pieces into roughly 1 cm cubes
- Heat a large, non-stick frying pan over medium heat
- Add the oil to the pan
- Place the diced plantain in the pan and season with a pinch of salt
- Sauté for about 6 minutes, stirring occasionally, until lightly caramelised. The time may vary depending on the ripeness of the plantain; riper plantains will caramelise faster
- Lower the heat
- Add the butter cubes to the pan and stir until completely melted
- Season with 1 teaspoon of salt and black pepper to taste
- Gradually add the cornmeal, mixing continuously with a spatula to incorporate well
- Cook for another 4 minutes, stirring constantly, until the farofa is crispy and well-browned
- Turn off the heat and serve the farofa immediately
