Easy Homemade Plantain Farofa

Ingredients

2 green plantains
2 cups (tea) yellow cornmeal flakes
75 g butter, cubed
1 tablespoon vegetable oil
Salt to taste
Freshly ground black pepper to taste

Where to find ingredients

Plantains can be found in the produce section of most supermarkets. Green plantains are preferred for this recipe, but slightly riper ones can also be used, though they will caramelize faster.
Yellow cornmeal flakes (farinha de milho em flocos) are typically found in the international foods aisle of larger supermarkets, or specifically in Latin American or Brazilian specialty stores. If unavailable, coarse cornmeal or polenta can be a substitute, though the texture might differ slightly.
Butter and vegetable oil are standard supermarket items.
Salt and pepper are common pantry staples.

Preparation method

  1. Trim the ends of the plantains and peel them
  2. Cut each plantain in half lengthwise
  3. Cut each half in half again lengthwise
  4. If the strips are too thick, cut them into thirds
  5. Slice each piece of plantain into cubes of approximately 1 cm
  6. Heat a large non-stick skillet over medium heat
  7. Add the oil to the skillet
  8. Place the chopped plantains in the skillet and season with a pinch of salt
  9. Brown the plantains for about 6 minutes, stirring occasionally, until lightly caramelized
  10. The time may vary depending on the ripeness of the plantain
  11. riper plantains brown faster
  12. Lower the heat
  13. Add the butter cubes to the skillet and stir until completely melted
  14. Season with 1 teaspoon of salt and black pepper to taste
  15. Add the cornmeal flakes gradually, mixing continuously with a spatula to incorporate well
  16. Cook for another 4 minutes, stirring constantly, until the farofa is crispy and well-browned
  17. Turn off the heat and serve the farofa immediately
