Where to find ingredients
You can find fresh tomatoes and basil at your local farmers' market or produce section of any grocery store. Coarse salt and high-quality olive oil are available in the spice and pantry aisles respectively.
Preparation
- Wash and dry the tomatoes thoroughly
- Remove the top of each tomato
- Place the tomatoes cut-side down on a cutting board
- Make cross cuts and then 'X' cuts to obtain 8 equal wedges
- Place the tomato pieces in a sieve or colander set over a bowl
- Sprinkle the coarse salt over them and mix well so they are evenly coated
- Cover the container with plastic wrap or a plate
- Refrigerate for 24 hours so the tomatoes can drain and maintain their texture
- If you need to serve them sooner, let them drain for at least 30 minutes
- Remove from the refrigerator at the moment of serving
- Discard the liquid accumulated in the bowl
- Shake the wedges gently to remove any excess coarse salt
- Arrange the tomatoes on a serving plate
- Finish by seasoning with olive oil and black pepper
- Add fresh basil leaves to taste and serve
