Ingredients
100g diced bacon
2 links smoked calabresa sausage
1 paio sausage
1 onion, finely chopped
3 garlic cloves, minced
2kg cooked mandioca
Water as needed
Diced cambuci pepper
1 cup fresh green herbs (parsley and chives)
Dried oregano to taste
Salt to taste
Black pepper to taste
2 whole eggs

Where to find ingredients
Find fresh mandioca, bacon, and sausages at local fresh food markets (suva market) or the butcher section of major supermarkets like RB Patel or NewWorld. Cambuci pepper can be substituted with bell pepper if unavailable.
Preparation method
- Sauté the garlic and onion in a large pot.
- Add the bacon, paio, and calabresa sausage.
- Stir well until all the meat is browned and fragrant.
- Add the cooked mandioca to the pot.
- Pour in enough water to cover the ingredients, leaving about two fingers' width of water above the mixture level.
- Add the green herbs, cambuci pepper, oregano, salt, and black pepper.
- Bring the soup to a boil.
- Crack the two whole eggs directly into the boiling pot.
- Stir gently to create ribbons of egg throughout the broth before serving.
