Ingredients

2 sirloin, top sirloin, or eye of round steaks
1 onion
2 tablespoons water
2 teaspoons white wine vinegar
1 teaspoon butter
Olive oil to taste
Salt to taste
Freshly ground black pepper to taste

Preparation method

  1. Let the steaks sit at room temperature for 10 minutes to take the chill off before cooking
  2. In a small bowl, combine the water and vinegar
  3. Peel the onion and slice it into half-moons about 0.5 cm thick
  4. Heat a large skillet over medium heat
  5. Season the steaks with salt and pepper
  6. Add 1 teaspoon of olive oil to the hot skillet
  7. Place the steaks side by side
  8. Sear for 2 minutes until golden brown and easily released from the pan
  9. Using tongs, flip the steaks
  10. Sear the other side for another 2 minutes
  11. Remove the meat from the skillet and set aside on a plate
  12. Keep the skillet over medium heat and add another 1 teaspoon of olive oil
  13. Sauté the onions with a pinch of salt for 2 minutes until they begin to brown
  14. Pour the water and vinegar mixture into the skillet
  15. Cook for 3 minutes, stirring occasionally to deglaze the pan and soften the onions
  16. Turn off the heat
  17. Add the butter and swirl the pan until it melts and the sauce emulsifies
  18. Serve the steaks topped with the onions and skillet sauce
