Preparation method
- Cook the white beans in a regular pot until tender
- Drain the beans and set aside
- Cook the tripe in water for approximately 40 minutes
- Drain the tripe water and set aside
- In a large pot, fry the bacon until golden
- Add the onion and garlic to the bacon and sauté until lightly golden
- Add the pork ribs and chicken thighs/drumsticks to the pot
- Brown the meats well
- Pour the chicken broth over the meats

- Let everything cook together until the potatoes are tender and the broth has thickened
- Finish by sprinkling with chopped parsley
