500 g white beans
500 g fresh pork ribs
500 g chicken thighs and drumsticks
200 g bacon
1 large onion, chopped
5 cloves garlic, chopped
1/2 kg potatoes
1/2 liter chicken broth
Chopped parsley to taste

Preparation method

  1. Cook the white beans in a regular pot until tender
  2. Drain the beans and set aside
  3. Cook the tripe in water for approximately 40 minutes
  4. Drain the tripe water and set aside
  5. In a large pot, fry the bacon until golden
  6. Add the onion and garlic to the bacon and sauté until lightly golden
  7. Add the pork ribs and chicken thighs/drumsticks to the pot
  8. Brown the meats well
  9. Pour the chicken broth over the meats
  10. Cook until the meats are al dente
  11. Add the cooked beans and tripe to the pot
  12. Add the chopped potatoes
  13. Let everything cook together until the potatoes are tender and the broth has thickened
  14. Finish by sprinkling with chopped parsley
  15. Serve with white rice and farofa
