Easy homemade potato gnocchi (Nhoque de batata)

Ingredients

6 medium potatoes
1 cup all-purpose flour
Salt to taste
500g minced beef
1/2 onion, finely chopped
1 tablespoon olive oil
2 beef stock cubes
1 can tomato sauce
Grated cheese to taste

Where to find ingredients

You can find fresh produce like potatoes and onions at local farmers' markets or larger grocery stores such as Choppies or Spar. Minced beef and pantry staples like tomato sauce and flour are readily available in the meat and dry goods aisles of any major supermarket in Botswana.

Preparation method

  1. Boil the potatoes in water until they are soft.
  2. Peel the potatoes and mash them while they are still hot.
  3. Gradually add the flour and salt, kneading until you achieve a smooth, homogeneous dough.
  4. Place the dough on a floured surface and shape it into long ropes.
  5. Cut each rope into pieces approximately 2 cm in length.
  6. In a large pot, bring plenty of salted water to a boil.
  7. Once the water is boiling, add the gnocchi in batches and wait for them to float to the surface.
  8. Prepare a bowl of cold water and a colander; use a slotted spoon to transfer the cooked gnocchi to the colander for a thermal shock.
  9. Repeat the process until all the dough is cooked.
  10. Drain the gnocchi well and set aside in a baking dish.
  11. Finely dice the onion and sauté in a pan with olive oil.
  12. Add the minced beef and beef stock cubes to the sautéed onion.
  13. Stir well and, once the meat is cooked, add the tomato sauce.
  14. Let the sauce simmer for another 4 minutes.
  15. Pour the meat sauce over the reserved gnocchi.
  16. Sprinkle with grated cheese.
  17. Place in the oven to brown the top.
  18. Serve hot.
