Ingredients
1 box pineapple-flavoured jelly crystals
2 boxes strawberry-flavoured jelly crystals
2 cups boiling water
2 cups chilled Coca-Cola
1 tin light thickened cream (drained of excess whey)
2 boxes strawberry-flavoured jelly crystals
2 cups boiling water
2 cups chilled Coca-Cola
1 tin light thickened cream (drained of excess whey)
Where to find ingredients
You can find jelly crystals and tinned cream in the baking and canned goods aisles of major Australian supermarkets like Woolworths or Coles. Light thickened cream is a common local substitute for traditional 'creme de leite'.
Preparation method
- Dissolve the pineapple jelly in 1 cup of boiling water and set aside.
- Dissolve both boxes of strawberry jelly together in 1 cup of boiling water and set aside.
- Combine the light cream, the dissolved pineapple jelly, and the chilled Coca-Cola in a blender.
- Blend all ingredients thoroughly until you achieve a uniform, smooth mixture.
- Pour the mixture into a mould (lightly rinsed with cold water to help with turning out later) or into individual serving glasses.
- Place in the refrigerator for approximately 3 hours, or until the mousse has fully set.
- Turn out carefully if using a mould, and garnish to your preference before serving.

It artfully blends the iconic fizz of Coca-Cola with the sweetness of jelly, resulting in a light, airy texture that is a guaranteed crowd-pleaser. It is a popular choice for finishing off a meal or serving at casual gatherings and parties, as it can be prepared well in advance and served either as individual portions or in a larger dish to share.
