Oven-Roasted Cassava

Ingredients

1.5 kg cassava (or 1.2 kg if already peeled)
3 tablespoons olive oil
Salt to taste
Freshly ground black pepper to taste

Preparation

  1. Preheat the oven to 220 ºC
  2. Peel the cassava
  3. Cut it into large pieces of approximately 8 cm
  4. Wash the pieces well under running water
  5. Place the cassava in a pressure cooker
  6. Cover with water without exceeding two-thirds of the pot's capacity
  7. Cover and place over high heat
  8. Once the pot starts to whistle
  9. Reduce the heat and cook for 5 minutes
  10. The ideal consistency is tender but still firm enough to be sliced
  11. Turn off the heat
  12. Wait for the pressure to release completely before opening the lid
  13. Drain the water well in a colander
  14. Wait for the pieces to cool slightly so they can be handled
  15. Grease a large baking sheet with half of the olive oil
  16. Cut the cassava pieces in half lengthwise
  17. Divide each half into sticks about 2 cm thick
  18. Arrange the sticks on the baking sheet in a single layer without overlapping
  19. Drizzle with the remaining olive oil
  20. Season with salt and pepper to taste
  21. Bake for approximately 40 minutes
  22. Turn the sticks halfway through the cooking time so they brown evenly
  23. Remove from the oven and serve immediately
