Fresh corn is widely available in the produce section of most supermarkets. You can also find it at farmers' markets. All-purpose flour, milk, egg yolks, and Parmesan cheese are standard pantry items found in any supermarket. If fresh corn is out of season, frozen corn kernels can be used as a substitute, though the texture may be slightly different.
Preparation method
- Wash the corn ears thoroughly and remove all silk strands
- Cut the kernels off the cobs using a knife and set aside in a bowl
- Place the corn kernels and milk in a blender
- Blend the mixture well
- Add the all-purpose flour to the blender
- Blend again to incorporate
- Pass the mixture through a fine-mesh sieve to remove the pulp
- Transfer the liquid to a saucepan and cook over low heat
- Stir constantly until thickened to prevent lumps from forming
- Transfer the cream to an ovenproof dish and let it cool completely
- Mix the egg yolk into the cooled dough
- Work the dough with hands lightly greased with all-purpose flour
- Shape the dough into long cylinders on a surface lightly dusted with flour
- Cut the cylinders into small pieces, in the traditional gnocchi size
- Cook the gnocchi pieces in boiling water until they float to the surface
- Remove the gnocchi from the water and arrange them in a serving dish
- Cover with your preferred sauce
- Finish by sprinkling grated Parmesan cheese on top
- Place in the oven just long enough to gratinate and brown
