Fresh Sweet Corn Gnocchi

Ingredients

6 ears of fresh sweet corn
3 cups milk
4 tablespoons all-purpose flour
1 egg yolk (membrane removed)
Grated Parmesan cheese to taste

Where to find ingredients

You can find fresh corn, milk, eggs, flour, and Parmesan cheese at any local supermarket, produce market, or farmers' market.

Method

  1. Wash the corn ears thoroughly and remove all the silk
  2. Cut the kernels off the cobs using a knife and place them in a bowl
  3. Place the corn kernels and the milk into a blender
  4. Blend the mixture well
  5. Add the all-purpose flour to the blender
  6. Blend again to incorporate
  7. Pass the mixture through a fine-mesh sieve to remove the fiber
  8. Transfer the liquid to a saucepan and place over low heat
  9. Stir constantly until thickened to ensure the dough remains smooth without lumps
  10. Transfer the cream to a dish and let it cool completely
  11. Mix the egg yolk into the cooled dough
  12. Work the dough with hands lightly dusted in flour
  13. Shape the dough into long cylinders on a surface dusted with flour
  14. Cut the cylinders into small pieces to match the size of traditional gnocchi
  15. Cook the pieces in boiling water until they float to the surface
  16. Remove the gnocchi from the water and place them in a baking dish
  17. Cover with your favorite sauce
  18. Finish by sprinkling grated Parmesan cheese over the top
  19. Bake just long enough for the cheese to melt and turn golden brown

Notes

This recipe uses fresh corn to create a light and delicious dough. The secret is constant stirring during the cooking process to reach the ideal consistency before shaping and finishing in the oven.
