Ingredients
1/2 papaya
100 ml orange juice
1 teaspoon liquid sweetener
1 teaspoon unflavoured powdered gelatin
1 tablespoon cold water
1 cup cream
1 egg white, beaten stiff
1 cup water
1 cup honey
3 tablespoons low-fat yogurt, beaten
100 ml orange juice
1 teaspoon liquid sweetener
1 teaspoon unflavoured powdered gelatin
1 tablespoon cold water
1 cup cream
1 egg white, beaten stiff
1 cup water
1 cup honey
3 tablespoons low-fat yogurt, beaten
Where to find ingredients
Look for the fruit and dairy in the produce and chilled dairy sections of supermarkets or fresh markets. If needed, plain yogurt can be used as a substitute for low-fat yogurt.
Preparation method
- Blend the papaya, orange juice and sweetener until smooth.
- Hydrate the gelatin in one tablespoon of cold water and let it stand for five minutes.
- Warm the cream and add the hydrated gelatin.
- Stir well until completely dissolved.
- Fold this mixture into the whipped papaya cream.
- Gently fold the beaten egg white into the mixture.
- Divide the mixture among individual moulds.
- Refrigerate for about six hours until set.
- Prepare the accompanying cream by heating the water with the honey.
- Let the syrup cool completely.
- Mix the low-fat yogurt into the cold syrup.
- Unmould the bavarois and serve with the yogurt cream around it.
Observations
This recipe brings together the natural sweetness of papaya and the airy texture of beaten egg white, finished with a smooth yogurt and honey sauce.
