Where to find ingredients
Find lamb offal at local butcher shops or traditional markets. Fresh produce, herbs, and pantry staples such as annatto, cachaça, and oil are available at supermarkets or specialized provision stores.
Preparation method
- In a glass, squeeze one lemon cut into quarters and stir in the sugar. Muddle well with a pestle.
- Pour in the shot of cachaça and add the ice cubes. Shake vigorously to mix.
- Set this mixture aside to serve alongside the meal.
- Begin cleaning the lamb stomach thoroughly using water, salt, and the juice of the remaining lemons to remove any impurities.
- Boil the stomach in a pressure cooker with water, salt, and bay leaves until it reaches a tender consistency.
- While the stomach is boiling, chop the lamb intestines into small pieces.
- Cook the chopped intestines in a separate pot with salted water until tender.
- Heat the vegetable oil in a pan and sauté the chopped onion and garlic until fragrant.
- Add the annatto, tomatoes, bell pepper, and the lamb organs (if using). Season with black pepper.
- Simmer the mixture until a rich, thick sauce develops.
- Remove the boiled stomach from the pressure cooker and slice it into small portions.
- Combine the sliced stomach and cooked intestines with the sautéed mixture. Stir in the fresh herbs and grated nutmeg.
- Once the filling is ready, use it to stuff the prepared stomach lining.
- Cook the stuffed stomach over low heat until all the flavors are perfectly melded.
- Serve the buchada piping hot, accompanied by the reserved drink mixture, and optionally a cold beer.
Observations
Lamb buchada is a cornerstone of Northeastern cuisine, celebrated for its bold, rustic flavor and labor-intensive preparation. The dish involves meticulously cleaning and cooking the sheep’s offal—including the stomach, intestines, and organ meats—which is then used to stuff the stomach lining. It requires patience and attention to detail, but the rich, deeply savory results are highly prized during family celebrations and traditional feasts.
