Oven-Baked Salted Cod

Ingredients
1 kg salted cod
1/2 kg potatoes
1/2 kg carrots
2 ripe red tomatoes
1 capsicum
2 large onions

Where to find ingredients
In Pakistan, look for salted cod at well-stocked fishmongers, frozen seafood counters or imported-food sections of larger supermarkets. Potatoes, carrots, onions, tomatoes, capsicum, coriander, garlic, olives, coconut milk, dairy and baking basics are usually found in supermarket produce, grocery and dairy aisles. If salted cod is unavailable, ask for dried salted fish as a substitute, while keeping salted cod as the ideal ingredient.
Preparation method
- Start by soaking the salted cod for 24 hours, changing the water regularly to draw out the excess salt
- Boil the cod briefly, discard the skin and bones, reserve the cooking water and pull the flesh into flakes
- Season the cod flakes with garlic, salt and coriander
- In a pan with a little olive oil, saute the sliced onions
- Add the chopped tomatoes, with skin and seeds removed, along with the capsicum and olives
- Mix in the cod, tomato paste, coconut milk and a little of the fish cooking water, then cook until a full-bodied sauce forms; adjust the salt if needed
- Cook the sliced potatoes and carrots until tender
- For the white sauce, blend the milk, flour and melted butter; cook over the heat, stirring all the time, until thickened
- Finish the white sauce by mixing in the cream, nutmeg, black pepper, salt and beaten egg
- Rub a garlic clove all over the inside of a large oven dish and grease it with olive oil
- Assemble the dish in alternating layers of cod, potatoes and carrots
- Spread the white sauce over everything and bake in the oven until gratinated
- Garnish with olives and parsley before serving with plain white rice

This recipe brings together flaked salted cod, potatoes, carrots and a smooth white sauce in hearty layers. Soaking the cod properly and building the dish carefully helps keep it moist, well seasoned and full of flavour when it comes out of the oven.
