Garlic and Oil Pasta (Macarrão alho e óleo)

Ingredients

1 packet of pasta (500 g, of your choice)
1 clove garlic
1 sachet granulated garlic
1/2 stick unsalted butter
1 tablespoon extra virgin olive oil
1 bay leaf
Chopped fresh herbs (basil, oregano, parsley, spring onion, thyme, to taste)
Salt to taste
Ground ginger to taste

Where to find ingredients

Look for the pasta, butter, olive oil, bay leaf, dried herbs, salt, and ground ginger at the supermarket dry goods aisle, dairy section, and spice shelves; fresh basil, oregano, parsley, spring onion, and thyme are usually sold in the produce section or at the local sabzi market. If needed, use good-quality olive oil as a substitute for extra virgin olive oil.

Preparation method

  1. When the pasta is about 5 minutes away from being perfectly tender for draining, start making the sauce
  2. In a heated frying pan, add the butter, olive oil, bay leaf, and granulated garlic
  3. Immediately after draining the pasta, add it to the frying pan
  4. Mix the pasta well with the seasonings in the pan, adjusting the salt to taste
  5. Stir in the chopped fresh herbs and ground ginger, mixing to distribute everything evenly
  6. Prepare the plates by gently rubbing the raw garlic clove over the inside surfaces
  7. Serve the pasta on the prepared plates, finishing with a little more fresh herbs for garnish
