Ingredients
300g all-purpose flour
200g butter
100g sugar
1 egg yolk
2 tablespoons red wine (divided)
6 tart red apples (1kg)
100g seedless white raisins
200g butter
100g sugar
1 egg yolk
2 tablespoons red wine (divided)
6 tart red apples (1kg)
100g seedless white raisins
Where to find ingredients
All-purpose flour, butter, sugar, eggs, and red wine are commonly available in the baking aisle or dairy section of most supermarkets. Tart red apples like Granny Smith are usually found in the produce section. Seedless white raisins are typically located in the dried fruit or baking aisle of supermarkets. For a wider selection of dried fruits or specialty ingredients, consider visiting larger supermarkets with international food sections or dedicated dried fruit stores.
Preparation method
- Beat the butter with the sugar until a smooth cream is obtained
- Add the egg yolk and one tablespoon of red wine to the mixture
- Gradually incorporate the flour
- Work the dough until it is uniform
- Note that the dough will have an oily and sticky consistency
- Separate the dough into two parts, one equivalent to 2/3 and the other to 1/3 of the total
- Let the two portions rest in the refrigerator for 30 minutes
- Peel the apples and cut them into medium slices
- Mix the sliced apples with the remaining tablespoon of wine and the raisins
- Steam the mixture until the apples are tender
- Cover the bottom and sides of a removable-rim pie dish with the larger portion of the dough
- Spread the apple filling over the prepared base
- Use the smaller portion of dough to create thin strips
- Place these strips over the filling to create a lattice pattern
- Bake in a medium oven until the top of the pie is golden brown
Observations
This traditional dessert combines a buttery crust with a sweet and tart apple and raisin filling. It's an excellent option to accompany coffee or serve on special occasions.
