Ingredients

5 eggs
5 tablespoons sugar
2 tablespoons cocoa powder
1 tablespoon granulated instant coffee
4 to 5 tablespoons all-purpose flour
Margarine for greasing
1 can (about 14 oz or 395g) heavy cream, no-fat separated
200 g semi-sweet chocolate bar, chopped
1/2 tablespoon instant coffee
1 teaspoon rum (optional)
Sugar for dusting
Mint leaves for decoration
Cherries for decoration

  11. Set the filling aside
  12. Remove the Swiss roll from the oven and immediately invert it onto a clean, dry tea towel that has been dusted with sugar
  13. Roll up the still-warm Swiss roll in the towel and let it cool completely
  14. Carefully unroll the cooled cake
  15. Spread half of the filling over the cake
  16. Roll up the Swiss roll again, this time with the filling inside
  17. Cover the Swiss roll with the remaining filling
  18. Decorate with mint leaves and cherries
  19. Refrigerate for at least 30 minutes before serving
