Where to find ingredients
Eggs, sugar, all-purpose flour, margarine, and chocolate are widely available in the baking aisle of most supermarkets. Heavy cream can be found in the dairy section. Cocoa powder is usually in the baking or international foods aisle. Instant coffee is available in the coffee or tea aisle. Rum can be found in the liquor store or the beverage aisle of larger supermarkets. Mint leaves and cherries for decoration are typically found in the produce section or the baking supplies aisle. If you can't find semi-sweet chocolate, you can substitute with dark chocolate.
Preparation method
- Beat egg whites until stiff peaks form in a mixer
- Gradually add egg yolks and sugar to the beaten egg whites, continuing to beat until a homogeneous mixture is obtained
- Remove the mixture from the mixer
- In a separate bowl, sift together the cocoa powder, instant coffee, and flour
- Gently fold the dry ingredients into the egg mixture, alternating with a little coffee if needed to adjust consistency
- Grease a rectangular baking pan and line it with parchment paper, also greasing the paper
- Pour the batter into the prepared pan and bake in a preheated medium oven
- While the cake bakes, prepare the filling: warm the heavy cream in a double boiler
- Add the chopped chocolate to the warm cream and stir until the chocolate is completely melted and the mixture is smooth
- Incorporate the rum (if using) into the filling and mix well
- Set the filling aside
- Remove the Swiss roll from the oven and immediately invert it onto a clean, dry tea towel that has been dusted with sugar
- Roll up the still-warm Swiss roll in the towel and let it cool completely
- Carefully unroll the cooled cake
- Spread half of the filling over the cake
- Roll up the Swiss roll again, this time with the filling inside
- Cover the Swiss roll with the remaining filling
- Decorate with mint leaves and cherries
- Refrigerate for at least 30 minutes before serving
