Easy and Delicious Coffee Swiss Roll

Ingredients

5 eggs
5 tablespoons sugar
2 tablespoons cocoa powder
1 tablespoon instant coffee granules
4 to 5 tablespoons all-purpose flour
Margarine for greasing
1 can (about 300g) condensed milk
200 g semi-sweet chocolate bar, chopped
1/2 tablespoon instant coffee
1 teaspoon rum (optional)
Sugar for dusting
Mint leaves for garnish
Cherries for garnish

Where to find ingredients

Most ingredients can be found in the baking aisle of your local supermarket. Specialty coffee items might be available in larger grocery stores or gourmet shops. Look for chocolate in the candy or baking section.

Preparation method

  1. Beat the egg whites until stiff peaks form in a stand mixer
  2. Gradually add the egg yolks and sugar to the beaten egg whites, continuing to beat until a homogeneous mixture is obtained
  3. Remove the mixture from the stand mixer
  4. In a separate bowl, sift together the cocoa powder, instant coffee, and flour
  5. Gently fold the dry ingredients into the egg mixture, alternating with a little coffee if needed to adjust consistency
  6. Grease a rectangular baking pan and line it with parchment paper, also greasing the paper
  7. Pour the batter into the prepared pan and bake in a preheated oven at medium temperature
  8. While the cake bakes, prepare the filling: heat the condensed milk in a double boiler
  9. Add the chopped chocolate to the heated condensed milk and stir until the chocolate is completely melted and the mixture is smooth
  10. Incorporate the rum (if using) into the filling and mix well
  11. Set the filling aside
  12. Remove the Swiss roll from the oven and immediately unmold onto a clean, dry kitchen towel that has been previously dusted with sugar
  13. Roll up the still-warm cake in the towel and let it cool completely
  14. Carefully unroll the cooled cake
  15. Spread half of the filling over the cake
  16. Roll the Swiss roll again, this time with the filling inside
  17. Cover the Swiss roll with the remaining cream
  18. Decorate with mint leaves and cherries
  19. Refrigerate for at least 30 minutes before serving

This coffee Swiss roll is a classic Brazilian recipe, known for its light cake and distinct coffee flavor. It's a practical and delicious option for snacks, family gatherings, or to accompany a fresh cup of coffee.

The preparation involves an airy batter made with beaten eggs and simple ingredients, which bakes quickly. The creamy chocolate filling with a subtle hint of coffee perfectly complements the cake, resulting in an irresistible combination.
