250ml heavy cream for whipping

Cashew nuts are widely available in the nuts and seeds aisle of most supermarkets or at local markets. Look for them whole, chopped, or as pieces. Papayas can be found in the tropical fruit section of your local grocery store or at fruit vendors. Heavy cream for whipping is usually found in the dairy section of supermarkets.
Preparation method
- Cut the papayas in half and remove all seeds
- Scoop out the pulp from one papaya and blend until smooth puree
- Finely dice the pulp from the second papaya and set aside
- Whip the heavy cream with the sugar until stiff peaks form
- Gently fold the papaya puree into the whipped cream, keeping the mixture light
- Add the diced papaya pieces and gently incorporate
- Pour the mixture into ice cube trays or a suitable container and freeze for at least 4 hours
- To unmold, briefly dip the bottom of the container in warm water
- Cut the ice cream into cubes, serve in bowls, and top with chopped cashews
- If desired, add a few drops of lime juice over the bowls for a citrusy touch
