Preparation method
- Wash the corn ears well and remove all silk
- Cut the kernels off the ears using a knife and reserve in a bowl
- Place the corn kernels and milk in a blender
- Blend the mixture well
- Add the wheat flour to the blender
- Blend again to incorporate
- Pass the mixture through a fine-mesh sieve to remove the pulp
- Transfer the liquid to a saucepan and cook over low heat
- Stir constantly until thickened to prevent lumps from forming
- Transfer the cream to an ovenproof dish and let it cool completely
- Mix the egg yolk into the cooled dough
- Work the dough with lightly floured hands
- Shape the dough into long cylinders on a lightly floured surface
- Cut the cylinders into small pieces, the traditional gnocchi size
- Cook the gnocchi pieces in boiling water until they float to the surface
- Remove the gnocchi from the water and arrange them in a serving dish
- Cover with your favorite sauce
- Finish by sprinkling grated Parmesan cheese on top
- Bake in the oven just long enough to gratinate and brown
