Preparation method
- Wash the corn ears thoroughly and remove all silks
- Cut the kernels off the cobs with a knife and set aside in a bowl
- Place the corn kernels and milk in a blender
- Blend the mixture well
- Add the all-purpose flour to the blender
- Blend again to incorporate
- Pass the mixture through a fine-mesh sieve to remove pulp
- Transfer the liquid to a saucepan and place over low heat
- Stir constantly until thickened to prevent lumps from forming
- Transfer the cream to an oven-safe dish and let it cool completely
- Mix the egg yolk into the cooled dough
- Work the dough with hands lightly greased with flour
- Shape the dough into long cylinders on a lightly floured surface
- Cut the cylinders into small pieces, the traditional gnocchi size
- Cook the pieces in boiling water until they float to the surface
- Remove the gnocchi from the water and arrange in a serving dish
- Cover with your preferred sauce
- Finish by sprinkling grated Parmesan cheese on top
- Bake in the oven just long enough to melt and brown the cheese
