Ingredients

6 ears of fresh corn
3 cups milk
4 tablespoons all-purpose flour
1 egg yolk (membrane removed)
Grated Parmesan cheese

Preparation

  1. Wash the ears of corn thoroughly and remove all the silk
  2. Cut the kernels off the cobs using a knife and place them in a bowl
  3. Place the corn kernels and the milk into a blender
  4. Blend the mixture well
  5. Add the all-purpose flour to the blender
  6. Blend again to incorporate
  7. Strain the mixture through a fine-mesh sieve to remove the solids
  8. Transfer the liquid to a pot and place over low heat
  9. Stir constantly until thickened to prevent the dough from forming lumps
  10. Transfer the cream to a dish and let it cool completely
  11. Mix the egg yolk into the cooled dough
  12. Work the dough with hands greased with all-purpose flour
  13. Shape the dough into long cylinders on a surface dusted with flour
  14. Cut the cylinders into small pieces the size of traditional gnocchi
  15. Cook the pieces in boiling water until they float to the surface
  16. Remove the gnocchi from the water and place them in a baking dish
  17. Cover with a sauce of your preference
  18. Finish by sprinkling grated Parmesan cheese over the top
  19. Place in the oven just long enough to brown and gratiné
