Preparation
- Wash the ears of corn thoroughly and remove all the silk
- Cut the kernels off the cobs using a knife and place them in a bowl
- Place the corn kernels and the milk into a blender
- Blend the mixture well
- Add the all-purpose flour to the blender
- Blend again to incorporate
- Strain the mixture through a fine-mesh sieve to remove the solids
- Transfer the liquid to a pot and place over low heat
- Stir constantly until thickened to prevent the dough from forming lumps
- Transfer the cream to a dish and let it cool completely
- Mix the egg yolk into the cooled dough
- Work the dough with hands greased with all-purpose flour
- Shape the dough into long cylinders on a surface dusted with flour
- Cut the cylinders into small pieces the size of traditional gnocchi
- Cook the pieces in boiling water until they float to the surface
- Remove the gnocchi from the water and place them in a baking dish
- Cover with a sauce of your preference
- Finish by sprinkling grated Parmesan cheese over the top
- Place in the oven just long enough to brown and gratiné
