Ingredients

The key ingredients for this soup are readily available in most supermarkets. Look for bacon, onions, garlic, eggs, salt, and pepper in the usual sections. Smoked sausages like Calabresa and other cured pork sausages can often be found in the deli or butcher's counter, sometimes in specialty international aisles. If you can't find Calabresa, any good quality smoked kielbasa or a similar firm, smoked pork sausage will work well. Fresh cilantro and green onions (scallions) are usually found with fresh herbs and produce. Preparation method
- Sauté garlic and onion in a large pot over medium heat until softened
- Add the diced bacon, sliced Calabresa, and smoked pork sausage
- Cook, stirring occasionally, until the meats are browned and the onion is well-sautéed
- Add the cooked cassava to the pot
- Pour in enough water to cover the ingredients by about 2 inches
- Stir in the chopped cilantro and green onion mix, dried oregano, salt, and black pepper
- Bring the soup to a boil
- Crack the two eggs directly into the boiling soup
- Gently stir the soup with a fork to create delicate ribbons from the eggs as they cook. Serve immediately
