Lentil and Spinach Soup

Ingredients

1 cup (tea) lentils
1 onion
1/2 carrot (or 1/3 cup (tea) grated)
1 celery stalk (or 1/4 cup (tea) chopped)
2 cloves of garlic
1 liter of water
Olive oil
1 teaspoon cumin
1 teaspoon turmeric
1 bay leaf
1/2 bunch of spinach
Salt and freshly ground black pepper to taste
Crispy bacon bits to taste for garnish

Method

  1. Clean the spinach leaves in a bowl of water with a produce wash for 15 minutes
  2. Finely dice the onion and garlic
  3. Grate the carrot using the coarse side of a grater
  4. Cut the celery into small cubes after discarding the leaves
  5. Heat a pressure cooker over medium heat with one tablespoon of olive oil
  6. Sauté the onion with a pinch of salt until golden
  7. Add another tablespoon of olive oil
  8. Sauté the carrot and celery for 2 minutes
  9. Add the garlic and the bay leaf
  10. Add the cumin and turmeric
  11. Sauté for 1 minute to release the aromas
  12. Incorporate the lentils into the pot
  13. Pour in the water gradually
  14. Use a spoon to scrape the bottom of the pot
  15. Season with salt and pepper
  16. Close the pot and cook over high heat
  17. Once pressure is reached
  18. Reduce heat and cook for 5 minutes
  19. Turn off the heat and wait for all the steam to release before opening the lid
  20. Rinse the spinach and stir the leaves into the broth
  21. Cook uncovered over medium heat for another 2 minutes until the spinach is tender
  22. Adjust salt if necessary
  23. Serve with a drizzle of olive oil and crispy bacon bits
