Homemade Crispy Pastel Dough

Ingredients

500g all-purpose flour
1 tablespoon salt
2 tablespoons oil or melted lard
1 tablespoon white vinegar
200ml warm water

Where to find ingredients

You can find all-purpose flour, vinegar, and oils in the baking or pantry aisles of any local grocery store or supermarket.

Preparation

  1. Combine the flour and salt in a large mixing bowl
  2. Create a well in the center of the flour
  3. Add the oil or lard along with the vinegar
  4. Gradually pour in the warm water
  5. Incorporate the ingredients with your hands until the dough pulls away from your fingers
  6. Transfer the dough to a smooth surface
  7. Knead vigorously until the texture is smooth and homogeneous
  8. If the dough feels too stiff add just a few drops of water
  9. If it feels sticky sprinkle in a little extra flour
  10. Cover the dough with a clean kitchen towel
  11. Let it rest for 20 minutes
  12. Roll out the dough using a rolling pin until it is very thin
  13. Cut into your desired sizes and shapes
  14. Place your preferred filling onto the pieces
  15. Press the edges firmly to seal the dough and prevent them from opening during frying
  16. Deep fry in hot oil until golden brown
  17. Drain the excess oil and serve immediately

Notes

If you want your pastéis to be perfectly crispy and not greasy, the secret is to knead the dough thoroughly and roll it out very thinly before frying.
