Traditional Chicken and Rice Stew (GALINHADA)

Ingredients

1 whole chicken, cut into medium pieces
4 tablespoons oil or olive oil
Salt to taste
Black pepper to taste
1 large onion, chopped
3 garlic cloves, minced
1/2 green bell pepper, chopped (optional)
2 tomatoes, peeled, seeded, and chopped
1/2 teaspoon turmeric powder or 2 sachets of prepared turmeric seasoning
2 cups white rice
4 cups hot water
1/4 cup chopped fresh herbs (parsley and green onions)

Where to find ingredients

You can find these ingredients at local neighborhood markets, butcher shops for the chicken, and general grocery stores for produce, rice, and spices. Annatto (colorau) is a common Brazilian spice; turmeric or curry powder may serve as suitable substitutes if annatto is unavailable.

Preparation method

  1. Season the chicken pieces with salt and black pepper to taste.
  2. Heat the oil or olive oil in a large pot over medium heat.
  3. Sear the chicken pieces until browned on all sides.
  4. Remove the chicken from the pot and set aside.
  5. In the same pot, add the chopped onion and sauté until translucent.
  6. Add the minced garlic and chopped green bell pepper (if using) and sauté for another 2 minutes.
  7. Add the chopped tomatoes and cook until they begin to break down.
  8. Stir in the turmeric powder or prepared seasoning, mixing well.
  9. Return the chicken pieces to the pot, coating them with the sautéed base.
  10. Add the rice and mix well, coating the grains in the mixture for about 1 minute.
  11. Pour in the hot water and adjust the salt if necessary.
  12. Once boiling, reduce the heat to low, cover the pot, and cook for approximately 15 to 20 minutes, or until the rice is cooked and the water is absorbed.
  13. Check that the chicken is fully cooked through.
  14. Turn off the heat and stir in the chopped fresh herbs.
  15. Let the galinhada rest, covered, for 5 minutes before serving.

Observations

Galinhada is a beloved dish in Brazil, celebrated for its delicious combination of tender chicken and aromatic, flavorful rice. Prepared across the country, it is the perfect choice for a special Sunday lunch or a family gathering, offering a hearty and soul-warming meal.

To achieve a perfect galinhada, the secret lies in using quality ingredients and slow-cooking, allowing all the seasonings to meld beautifully. Turmeric or annatto provide a vibrant color and distinctive aroma, while essential seasonings like onion, garlic, and fresh herbs elevate the dish. While you can customize it with additional vegetables, the traditional recipe is a standalone delight.
