Where to find ingredients
Lentils, spinach, onion, carrot, celery, garlic, olive oil, cumin, turmeric, bay leaves, salt and pepper can be found in supermarkets, markets and general food shops. Bacon farofa may be found in Brazilian speciality shops; crisp bacon crumbs can be used as a substitute, keeping bacon farofa as ideal.
Preparation method
- Clean the spinach leaves in a bowl with water and your preferred food-safe sanitiser for 15 minutes
- Finely chop the onion and garlic
- Grate the carrot on the coarse side of the grater
- Cut the celery into small cubes, discarding the leaves
- Heat the pressure cooker over medium heat with one spoon of olive oil
- Sauté the onion with a pinch of salt until golden
- Add another spoon of olive oil and sauté the carrot and celery for 2 minutes
- Add the garlic and bay leaf
- Add the cumin and turmeric and sauté for 1 minute to release the aromas
- Stir the lentils into the pan
- Pour in the water gradually and use a spoon to loosen the bottom of the pan
- Season with salt and pepper
- Close the pan and cook over high heat
- After it reaches pressure, reduce the heat and cook for 5 minutes
- Turn off the heat and wait for all the steam to release before opening the lid
- Rinse the spinach and stir the leaves into the broth
- Cook uncovered over medium heat for another 2 minutes until the spinach is tender
- Adjust the salt if needed
- Serve with a drizzle of olive oil and the bacon farofa
