Jiló Baked with Gratinéed Cheese: Easy and Quick Recipe

Ingredients

6 medium jiló (bitter melon)
1 medium onion, chopped
2 cloves garlic, minced
1 medium tomato, chopped
2 tablespoons butter
Salt to taste
1 whole egg
Grated Parmesan cheese to taste

Where to find ingredients

Jiló (bitter melon) can often be found in the produce section of larger supermarkets, especially those with a diverse selection, or at farmers' markets. Latin American or international grocery stores are also good places to look. If unavailable, it can sometimes be substituted with zucchini or eggplant for a milder flavor, though the characteristic bitterness will be lost.

Preparation method

  1. Wash and slice the jiló into thin rounds
  2. In a saucepan, heat the butter over medium heat
  3. Sauté the onion and garlic until golden
  4. Add the chopped tomato and salt, cooking for a few more minutes
  5. Add the egg to the sauté and mix quickly until incorporated
  6. Grease a baking dish with butter
  7. Spread half of the jiló slices in the baking dish
  8. Cover with half of the sautéed mixture
  9. Sprinkle a layer of grated Parmesan cheese
  10. Repeat the layers with the remaining jiló and sautéed mixture
  11. Finish with more grated Parmesan cheese on top
  12. Bake in a preheated oven at 180°C (350°F) for approximately 20-25 minutes, or until golden brown and the jiló is tender
