Preparation method
- Wash and slice the jilós into thin rounds
- In a pan, heat the butter over medium heat
- Sauté the onion and garlic until golden
- Add the chopped tomato and salt, cooking for a few more minutes
- Add the egg to the sauté and mix quickly until incorporated
- Grease a baking dish with butter
- Spread half of the jiló slices in the baking dish
- Cover with half of the sauté
- Sprinkle a layer of grated Parmesan cheese
- Repeat the layers with the remaining jiló and sauté
- Finish with more grated Parmesan cheese on top
- Bake in a preheated oven at 180°C (350°F) for approximately 20-25 minutes, or until golden brown and the jiló is tender
