Easy Homemade Potato Gnocchi (Nhoque de batata)

Ingredients

6 medium potatoes
1 cup all-purpose flour
Salt to taste
1/2 kg ground beef
1/2 onion, finely chopped
1 tablespoon olive oil
2 beef bouillon cubes
1 can tomato sauce
Grated cheese to taste

Where to find ingredients

Potatoes, onions, and beef can be found in the fresh produce and butchery sections of local markets in Freetown or regional supermarkets. Flour, tomato sauce, and bouillon cubes are available in the pantry aisles of grocery stores. Grated cheese, such as parmesan or local hard cheese alternatives, can be found in the dairy section.

Preparation method

  1. Boil the potatoes in water until tender.
  2. Peel the potatoes and pass them through a potato ricer while still hot.
  3. Add the flour little by little and the salt, kneading well until you obtain a smooth dough.
  4. Place the dough on a floured surface and roll it into long ropes.
  5. Cut each rope into pieces approximately 2 cm in length.
  6. In a large pot, bring plenty of salted water to a boil.
  7. When the water boils, add the gnocchi in small batches, waiting for them to rise to the surface.
  8. Prepare a bowl with cold water and a colander. Remove the cooked gnocchi with a slotted spoon and place them in the colander for a cold shock.
  9. Repeat the process until all the dough is cooked.
  10. Drain the gnocchi well and set aside in a baking dish.
  11. Finely dice the onion and sauté in a pan with the olive oil.
  12. Add the ground beef and the beef bouillon cubes to the sautéed onion.
  13. Stir well and, once the beef is cooked, add the tomato sauce.
  14. Let the sauce simmer for 4 minutes.
  15. Pour the meat sauce over the reserved gnocchi.
  16. Sprinkle with grated cheese.
  17. Place in the oven to gratinate.
  18. Serve hot.
