Parsley Rice

Ingredients

1/2 onion
1 tablespoon olive oil
1/2 teaspoon salt
1 bay leaf
1 cup rice
2 cups water
1/2 cup parsley

Preparation

  1. Peel and chop the onion into small pieces
  2. Wash the parsley
  3. Dry it well and chop it coarsely
  4. Place a little more than 2 cups of water in a kettle and heat over low heat until boiling
  5. Heat a medium saucepan over low heat
  6. Add the olive oil and the chopped onion
  7. Season with a pinch of salt and sauté for approximately 2 minutes until the onion is soft
  8. Add the bay leaf and the rice to the pan
  9. Stir continuously for 1 minute to ensure the grains are coated in the oil
  10. This process helps keep the rice fluffy after cooking
  11. Measure exactly 2 cups of the boiling water and add it to the rice
  12. Season with the remaining salt and mix well
  13. Increase the heat to medium
  14. Avoid stirring from this point on
  15. When the water reaches the level of the grains, reduce the heat and partially cover the pan
  16. Cook until all the water is absorbed
  17. Check that the bottom of the pan is dry by using a fork to push the grains aside
  18. Turn off the heat
  19. Keep the pan covered for 5 minutes to finish cooking in the steam
  20. Use a fork to fluff the rice
  21. Incorporate the chopped parsley and mix gently
  22. Serve immediately
