1 egg white, whisked to stiff peaks
60 ml water
60 ml honey

Where to find ingredients
Papaya, honey, and yogurt can be found in any local supermarket or wet market. Unflavoured gelatine and thickened cream are available in the baking or dairy aisles of major grocery chains. Egg whites should be separated from fresh eggs found in the poultry section.
Preparation method
- Blend the papaya, orange juice, and liquid sweetener in a blender until smooth
- Bloom the gelatine in one tablespoon of cold water and let it sit for five minutes
- Heat the thickened cream in a small saucepan and whisk in the bloomed gelatine
- Stir well until the gelatine is completely dissolved
- Gently fold the cream mixture into the blended papaya puree
- Carefully fold the stiffly beaten egg white into the papaya mixture
- Pour the mixture into individual dessert moulds
- Refrigerate for about six hours until the mixture has set
- Prepare the accompaniment by heating the water and honey together in a small pot
- Allow the honey syrup to cool down completely to room temperature
- Whisk the low-fat yogurt into the cooled honey syrup
- Unmould the Bavarian cream and serve with the yogurt sauce drizzled around the plate
Observations
This recipe blends the natural sweetness of papaya with an aerated egg white texture, served alongside a silky honey-yogurt accompaniment. It is a refined, light, and healthy dessert choice.
