Traditional Galinhada: A Classic Recipe (Galinhada)

Ingredients

1 whole chicken, cut into medium-sized pieces
4 tablespoons vegetable oil or olive oil
Salt to taste
Black pepper to taste
1 large onion, finely chopped
3 garlic cloves, minced
1/2 green bell pepper, chopped (optional)
2 tomatoes, peeled, seeded, and chopped
1/2 teaspoon turmeric powder (or 2 packets of powdered seasoning containing turmeric)
2 cups rice
4 cups hot water
1/4 cup fresh herbs, chopped (parsley and green onions)

Where to find ingredients

You can find these fresh ingredients at local Pakistani bazaars or vegetable markets (sabzi mandi), where fresh chicken, aromatic onions, and garlic are widely available. Turmeric is common in the spice section of any grocery store. For the rice, standard long-grain or basmati rice works best for this preparation. If green onions are unavailable, you may substitute them with a mix of fresh coriander and mint.

Preparation method

  1. Season the chicken pieces with salt and black pepper to taste.
  2. Heat the oil or olive oil in a large pot over medium heat.
  3. Sear the chicken pieces until they are browned on all sides.
  4. Remove the chicken from the pot and set it aside.
  5. In the same pot, add the chopped onion and sauté until translucent.
  6. Add the minced garlic and the chopped green bell pepper (if using) and sauté for another 2 minutes.
  7. Add the chopped tomatoes and cook until they begin to break down.
  8. Stir in the turmeric powder or the powdered seasoning, mixing well.
  9. Return the chicken pieces to the pot and coat them thoroughly with the sautéed mixture.
  10. Add the rice and stir well, coating the grains in the pan juices for about 1 minute.
  11. Pour the hot water into the pot and adjust the salt if necessary.
  12. Once the water comes to a boil, reduce the heat to low, cover the pot, and cook for approximately 15 to 20 minutes, or until the rice is tender and the liquid has been absorbed.
  13. Check to ensure the chicken is thoroughly cooked through.
  14. Turn off the heat and stir in the chopped fresh herbs.
  15. Let the Galinhada rest, covered, for 5 minutes before serving.

Observations

Galinhada is a beloved dish across Brazil, celebrated for its delicious combination of tender, braised chicken and flavorful rice. It is a staple in many regions and serves as the perfect centerpiece for a special Sunday lunch or a casual family get-together, offering a wholesome meal that captures the true essence of Brazilian home cooking.

To achieve the perfect Galinhada, the secret lies in using quality ingredients and allowing the dish to simmer patiently, ensuring all the flavors meld together beautifully. Turmeric or annatto provides the characteristic vibrant golden color and distinct aroma, while aromatics like onions, garlic, and fresh herbs elevate the overall taste. While you can certainly get creative with additional vegetables, the traditional preparation is already exceptional on its own.
