Where to find ingredients
All-purpose flour, salt, vegetable oil, white vinegar, and water can be found in most grocery stores. Lard, if preferred, is also available in the meat or international sections of larger supermarkets.
Preparation method
- Mix the all-purpose flour and salt in a large bowl
- Make a well in the center of the flour
- Add the oil or lard along with the vinegar
- Gradually pour in the lukewarm water
- Incorporate the ingredients with your hands until the dough pulls away from your fingers
- Transfer the dough to a clean, flat surface
- Knead vigorously until the dough is smooth and homogeneous
- If the dough seems too stiff, add just a few drops of water
- If it feels sticky, sprinkle with a little more flour
- Cover the dough with a clean kitchen towel
- Let it rest for 20 minutes
- Roll out the dough with a rolling pin until it is very thin
- Cut into desired sizes and shapes
- Distribute your preferred filling over the pieces
- Press the edges firmly to seal and prevent them from opening during frying
- Deep-fry in hot oil until golden brown
- Drain excess oil and serve immediately
Observations
If you want to make your pastels extra crispy and not oily, the trick is to knead the dough well and roll it out very thin before frying. This ensures a lighter, crispier result.
