600 ml water
500 g sugar
Peel of 2 oranges
Peel of 1 lemon

Where to find ingredients
Look for cachaça in the spirits aisle of a well-stocked liquor store or supermarket; spices, citrus, ginger, and apples are easiest to find in the produce and dry-goods sections. If needed, substitute another clear sugarcane spirit for cachaça, but the original is ideal.
Preparation method
- In a large pan, add the sugar, orange peels, lemon peels, ginger, cloves and cinnamon sticks
- Bring to medium heat and stir occasionally until the sugar begins to melt and caramelise lightly
- Carefully add the cachaça and water to the pan
- Mix well to dissolve the caramel
- Let the drink cook over medium heat for about 20 to 25 minutes, allowing the flavours to meld
- After cooking, strain the liquid to remove the spices and peels
- Add the chopped apple to the strained quentão
- If desired, keep warm over low heat before serving
