1 tbsp vegetable oil
Salt to taste
Freshly ground black pepper to taste
Where to find ingredients
You can find plantains (banana-da-terra) and yellow corn flour in the produce and international aisles of most local supermarkets and specialty food stores. If you cannot find flaked corn flour, toasted cassava flour (farinha de mandioca) can be used as a traditional substitute.
Preparation method
- Trim the ends of the plantains and peel them.
- Cut each plantain in half lengthwise.
- Cut each half lengthwise once more.
- If the resulting strips are too thick, slice them into three segments.
- Dice each piece into approximately 1 cm cubes.
- Heat a large non-stick frying pan over medium heat.
- Add the vegetable oil to the pan.
- Place the diced plantains in the pan and season with a pinch of salt.
- Sauté for about 6 minutes, stirring occasionally, until slightly caramelized; note that timing may vary depending on the ripeness of the plantains.
- Lower the heat.
- Add the butter cubes to the pan and stir until completely melted.
- Season with 1 teaspoon of salt and black pepper to taste.
- Add the corn flour gradually, stirring continuously with a spatula to incorporate thoroughly.
- Cook for an additional 4 minutes, stirring constantly, until the farofa is crispy and golden brown.
- Turn off the heat and serve the farofa immediately.
