Spinach Rice

Ingredients

1 1/2 cups rice
1 bunch spinach
1/2 onion
1 clove garlic
1 bay leaf
3 cups water
2 tablespoons butter
2 tablespoons olive oil
Freshly grated nutmeg to taste
Salt to taste

Preparation method

  1. Separate the spinach leaves from the stems and reserve the tips for garnish later
  2. Wash the leaves and stems thoroughly under running water and dry the leaves using a salad spinner
  3. Finely chop the onion and garlic clove
  4. Chop 8 spinach stems and reserve the rest for other preparations
  5. Heat a little over 3 cups of water in a kettle until it boils
  6. Heat a medium saucepan over low heat
  7. Add the olive oil, onion, and chopped stems
  8. Season with a pinch of salt and sauté for 3 minutes until wilted
  9. Add the garlic and bay leaf, sautéing for another 1 minute
  10. Place the rice in the saucepan
  11. Season with 1 teaspoon of salt and a pinch of nutmeg
  12. Mix well for 1 minute so the grains are coated in olive oil, ensuring the rice will be fluffy
  13. Pour the 3 cups of boiling water over the rice
  14. Increase the heat to medium and avoid stirring
  15. When the water reaches the level of the grains, lower the heat and partially cover the saucepan
  16. Cook until all the water is absorbed
  17. Check for doneness by gently moving the grains with a fork to see the bottom of the pan
  18. If there is still water, keep it on the heat for a few more moments
  19. Turn off the heat and keep the saucepan covered for 5 minutes to finish cooking with steam
  20. While waiting, heat a large skillet with 1 tablespoon of butter over medium heat
  21. Add half of the spinach leaves, season with salt, and quickly sauté for 2 minutes
  22. Remove the spinach to a bowl and repeat the process with the other half of the leaves
  23. After the rice has rested, fluff the grains with a fork
  24. Incorporate the sautéed spinach leaves into the rice, mixing gently
  25. Transfer to a serving dish and finish with the reserved tips before serving
