1 tablespoon chopped parsley

1/2 tablespoon chopped chives
1 and 1/2 cups all-purpose flour
Salt to taste
Enough water to cook the rice
8 tablespoons vegetable oil (for cooking the dough and boiling with water)
Where to find ingredients
Rice, eggs, flour, and common herbs like parsley, cilantro, and chives are readily available in the produce or baking aisles of most supermarkets. Vegetable oil can be found in the cooking oils section. Salt is a pantry staple. For water, use your tap water. If you are looking for specific varieties of rice or wish to explore other options, check the international foods aisle or specialty grocery stores.
Preparation method
- Cook the rice in salted water until very soft
- Drain excess water if any
- In a blender, blend the cooked rice with the egg, parsley, cilantro, and chives until a homogeneous mixture is obtained
- Transfer the mixture to a saucepan
- Gradually add the all-purpose flour, mixing
- Place the saucepan over low heat, cooking the dough while stirring constantly, until it completely pulls away from the bottom of the pan, forming a ball
- Season with salt to taste
- Remove the dough from the pan and let it cool slightly
- On a clean, lightly floured surface, shape the dough into a log about 2 cm in diameter
- Cut the gnocchi into pieces approximately 2 cm long
- In a large pot, boil plenty of salted water with about 4 tablespoons of oil
- Add the gnocchi to the boiling water, a few at a time, to prevent sticking
- Remove the gnocchi from the water as soon as they float to the surface, indicating they are cooked
- Drain the cooked gnocchi and, if desired, finish by sautéing them in a frying pan with the remaining vegetable oil or serve directly with your favorite sauce
Observations
Rice gnocchi is an interesting variation on traditional Italian pasta, adapted to local tastes and using rice as a base. This homemade recipe is an excellent option for those looking for a different, flavorful, and relatively easy-to-prepare dish. The combination of cooked rice with egg, fresh seasonings, and wheat flour results in soft gnocchi with a special touch, perfect to be served with your favorite sauce.
