Salted dried beef (carne-seca) can usually be found in the international foods aisle of larger supermarkets, in Latin or Brazilian specialty stores, or at butcher shops that carry specialty cured meats. It is important to look for 'carne-seca' specifically, as other dried or cured beef products might not yield the same result. Clarified butter (manteiga de garrafa) is common in Latin or Brazilian markets. If unavailable, you can substitute with regular butter, clarified at home by gently melting butter and skimming off the milk solids and water, or use ghee.
Preparation method
- Cut the salted dried beef into pieces approximately 7 cm
- Wash the beef pieces well under running water to remove excess salt
- Place the beef in a bowl and cover with cold water
- Leave in the refrigerator for at least 12 hours, changing the water at least 3 times during the desalting process
- After desalting, drain the beef and wash it again under running water
- Transfer the beef to a pressure cooker and cover with water, making sure not to exceed 2/3 of the cooker's volume
- Cover the pot and bring to high heat
- As soon as the pot reaches pressure and starts to whistle, lower the heat and cook for 30 minutes
- Turn off the heat and wait for all pressure to release naturally before opening the lid
- Using a slotted spoon, remove the cooked beef from the pot and place it in a serving dish
- While the beef is still hot, shred it using two forks
- Discard any small pieces of fat or cartilage
- If you prefer, shred the beef in a stand mixer on low speed until it reaches the desired texture
- Peel the onions and cut them into half-moons about 1 cm thick
- Heat a large skillet over medium heat
- Add the clarified butter to the heated skillet
- Add the sliced onions and season with a pinch of salt
- Sauté the onions for about 5 minutes, until they wilt
- Add the shredded salted dried beef to the skillet with the onions
- Stir and sauté for another 5 minutes
- Taste and adjust salt if necessary
- Serve immediately
