Where to find ingredients
Cassava (also known as yuca or aipim) can be found in the produce section of most supermarkets, especially those with a Latin American focus. Some larger supermarkets may carry pre-grated frozen cassava. Latin or Brazilian specialty food stores are excellent places to find fresh or frozen cassava, as well as pre-packaged grated cassava. If fresh cassava is unavailable, frozen grated cassava is a good substitute. Parmesan cheese is widely available in dairy sections of supermarkets. Margarine and eggs are standard supermarket items.
Preparation method
- Start by beating the margarine, sugar, and egg yolks until you get a smooth cream
- Add the grated cassava, Parmesan cheese, and pinch of salt, mixing everything very well
- Beat the egg whites until stiff and gently fold them into the batter to make the cake lighter
- Pour the mixture into a greased pan
- Bake in the oven for about 45 minutes, or until golden brown and firm
