Ingredients
1/2 ripe papaya
100 ml orange juice
1 tsp liquid sweetener
1 tsp unflavoured powdered gelatine
1 tbsp cold water
1 small cup double cream
1 egg white, whisked to stiff peaks
1 small cup water
1 small cup honey
3 tbsp plain low-fat yogurt
100 ml orange juice
1 tsp liquid sweetener
1 tsp unflavoured powdered gelatine
1 tbsp cold water
1 small cup double cream
1 egg white, whisked to stiff peaks
1 small cup water
1 small cup honey
3 tbsp plain low-fat yogurt
Where to find ingredients
Find fresh papayas and quality honey at local fresh produce markets or the fruit and veg aisle of your main supermarket. Unflavoured gelatine is typically found in the baking supplies section, near the custard powders or jelly crystals. High-quality double cream and plain low-fat yogurt are readily available in the chilled dairy aisle.
Preparation method
- Blend the papaya, orange juice, and sweetener in a blender until the mixture is completely smooth
- Bloom the gelatine in a tablespoon of cold water and let it stand for five minutes
- Warm the double cream gently in a saucepan, then stir in the bloomed gelatine
- Whisk thoroughly to ensure the gelatine has fully dissolved
- Fold this mixture into the blended papaya cream
- Gently fold the stiffly whisked egg white into the papaya mixture until just combined
- Divide the mixture evenly into individual moulds or ramekins
- Refrigerate for at least six hours until fully set
- Prepare the accompaniment by heating the water and honey together in a small pot
- Allow the honey syrup to cool completely
- Whisk the low-fat yogurt into the cooled honey syrup
- Unmould the bavaroise onto plates and drizzle with the honey-yogurt cream before serving
Observations
This dessert highlights the natural sweetness of ripe papaya, balanced by the light, airy texture of folded egg whites and a tangy, honeyed yogurt drizzle.
