Preparation method
- Wash and peel the carrot
- Grate the carrot using the fine side of your grater
- Finely dice the onion
- Boil slightly more than 3 cups of water in a kettle
- Warm a medium saucepan over low heat
- Pour in the olive oil
- Add the diced onion and grated carrot to the pan
- Season with the salt
- Sauté the vegetables for 2 minutes until they soften
- Stir in the rice and the bay leaf
- Mix well so every grain is coated in the oil
- Measure out exactly 3 cups of the boiling water and pour it over the rice
- Give it one last stir and turn the heat up to medium
- Avoid stirring the rice from this point on
- Wait for the water to reduce until it reaches the level of the rice grains
- Turn the heat down to the lowest setting
- Cover the pan partially with a lid
- Cook until all the water has been absorbed
- Test the doneness by poking the grains with a fork all the way to the bottom of the pan
- Turn off the heat
- Leave the pan covered for another 5 minutes so the steam finishes the cooking process
- Gently fluff the grains with a fork
- Toss the carrots through the rice delicately
- Transfer to a serving bowl and enjoy straight away
