Authentic Brazilian Cuscuz Paulista: Easy Recipe

Ingredients

1/2 cup vegetable oil
8 ripe tomatoes, peeled, seeded, and chopped
2 ripe tomatoes, thinly sliced, for garnish
1 small green bell pepper, finely diced
1 small red bell pepper, finely diced
1 can sweet corn, drained
1 can green peas, drained
1 can hearts of palm, chopped
2 hard-boiled eggs, roughly chopped
2 hard-boiled eggs, sliced, for garnish
2 cans sardines in oil, drained, deboned, and flaked
4 tablespoons chopped fresh parsley and spring onions (cheiro-verde)
6 vegetable or chicken bouillon cubes
4 cups fine yellow cornmeal
2 tablespoons fine manioc flour (tapioca flour)
1 red chili pepper, chopped, or hot sauce to taste
Black olives, for garnish

Where to find ingredients

You can find most of these ingredients at your local supermarket. Canned goods like corn, peas, and sardines are usually in the international or canned vegetable aisles. Hearts of palm are also typically canned. Fresh produce like tomatoes, bell peppers, parsley, and spring onions are readily available. For the fine cornmeal (often called 'fubá' in Brazil) and fine manioc flour (farinha de mandioca), check the international foods section or look for Latin American or Brazilian specialty stores. If you can't find manioc flour, it's best not to substitute it, as it's crucial for the texture. Olives are available in the canned goods or pickle aisle.

Preparation method

  1. Prepare the mold: Line the bottom and sides of a ring mold or pudding tin with tomato slices, hard-boiled egg slices, and some sardine fillets for decoration
  2. Sauté the aromatics: Heat the vegetable oil in a large pot and sauté the 8 chopped tomatoes and diced bell peppers until soft
  3. Add remaining ingredients: Stir in the chopped hearts of palm, peas, corn, chopped eggs, flaked sardines, and chili pepper. Mix well
  4. Prepare the broth: Dissolve the 6 bouillon cubes in 4 cups of boiling water and pour over the ingredients in the pot. Let it simmer for a few minutes
  5. Incorporate the flours: Gradually add the cornmeal and manioc flour, stirring constantly to prevent lumps, until you achieve a smooth and firm mixture
  6. Cook the mixture: Continue cooking and stirring for about 5 to 10 minutes, until the mixture thickens well and starts to pull away from the bottom of the pot
  7. Assemble the cuscuz: Pour the mixture into the prepared mold, smoothing the surface with a spatula to compact it lightly
  8. Unmold and serve: Once slightly cooled, invert the cuscuz onto a serving platter. Garnish with black olives and serve immediately
