Traditional Brazilian Corn Pamonha

Ingredients
12 ears of fresh corn (keep the husks)
1 cup of water
2 cups of sugar
1 cup of finely grated coconut

Where to find ingredients
You can find fresh corn on the cob with husks, shredded coconut, and sugar at any local farmer's market, fresh produce stand, or the produce section of your neighborhood grocery store.
Preparation method
- Carefully remove the husks from the corn and set them aside for wrapping later
- Grate the corn kernels off the cob or slice them close to the cob
- Place the corn in a blender with the water
- Blend until smooth
- Add the grated coconut
- Add the sugar and the pinch of salt
- Stir everything together very well
- Form small pockets using the corn husks
- Fill the husks with the corn mixture
- Tie the husks securely with kitchen twine or thin strips of husk to ensure they stay closed
- Bring a large pot of water to a rolling boil
- Carefully add the pamonhas one by one once the water is boiling vigorously
- Ensure the water remains at a full boil so the pamonhas do not fall apart
- Cook for approximately 40 minutes
- Remove the pamonhas carefully using a slotted spoon
- Allow them to cool in a cool place before serving
Observations
Serve warm with a cup of coffee.
