Easy Homemade Banana-da-Terra Farofa (Farofa de banana-da-terra)

Ingredients

2 green bananas-da-terra (plantains)
2 cups yellow flaked cornmeal (farinha de milho)
75g unsalted butter, cubed
1 tablespoon vegetable oil
Salt to taste
Freshly ground black pepper to taste

Where to find ingredients

You can find plantains (banana-da-terra) in international grocers or Asian/African specialty shops in Ireland. For the flaked cornmeal, look for 'farinha de milho amarela' in Brazilian specialty stores or online Latin food importers. As a substitute, coarse polenta or fine cornmeal can be used if the traditional Brazilian flaked corn flour is unavailable.

Preparation method

  1. Trim the ends of the bananas-da-terra and peel them.
  2. Cut each banana in half lengthwise.
  3. Cut each half lengthwise again.
  4. If the resulting strips are too thick, slice them into three pieces.
  5. Dice each piece into approximately 1 cm cubes.
  6. Heat a large non-stick frying pan over medium heat.
  7. Add the oil to the pan.
  8. Place the diced bananas in the pan and season with a pinch of salt.
  9. Brown the bananas for about 6 minutes, stirring occasionally, until lightly caramelized. Cooking time may vary depending on the ripeness of the bananas.
  10. Reduce the heat to low.
  11. Add the butter cubes to the pan and stir until completely melted.
  12. Season with 1 teaspoon of salt and black pepper to taste.
  13. Add the cornmeal gradually, stirring continuously with a spatula to ensure everything is well combined.
  14. Cook for another 4 minutes, stirring constantly, until the farofa is crispy and golden brown.
  15. Remove from heat and serve the farofa immediately.

Observations

Banana-da-terra farofa is a traditional Brazilian side dish, cherished for its unique combination of textures and flavors. The sweetness of the caramelized plantain contrasts beautifully with the crunch of the toasted cassava or corn flour, making it a versatile and savory addition to elevate any main course. This recipe is simple and quick to prepare, perfect for those looking to add a special touch to their everyday meals.
