Where to find ingredients
Look for the prawns at the fish counter or seafood market, and buy the tomatoes, lemons, spring herbs and coconut milk from the fresh produce and grocery aisles. If needed, use rapeseed oil as a substitute for soy oil, and palm oil as a substitute for azeite de dendê.
Preparation method
- Start by cleaning the prawns thoroughly, removing the shells and entrails, and rinse them under running water
- Season the prawns with salt, pepper, lemon juice and the chopped spring herbs, then leave to marinate for a few minutes
- Heat the oil in a pan and sauté the prawns until nicely browned
- Add the chopped tomatoes to the pan and cook until they break down, creating a thick sauce
- Pour in the coconut milk, cover the pan tightly and cook over low heat for about 10 minutes to let the flavours develop
- Finish by stirring in the azeite de dendê and adjust the pepper to your liking before serving
